Liquid Nitrogren and Food!

The use of liquid nitrogen in food preparation has been of some interest to me for a while. Everything from freezing herbs to making ice crème. Which is how dip n dots were first created. The owner wanted to sale cups of ice cream in little sphere forms but traditional methods were not enough to hold the shape he wanted. It turns out he just needed something much colder. Recently liquid nitrogen has been used in popular mixed drinks but there seems to be a problem with that in that there's a chance that the liquid nitrogen can freeze your stomach lining which can be a painful way to die.
